I knew I had to do something with it ASAP before it went to waste. I had a recipe printed for zucchini pizza casserole but wanted to bypass some of the prep and hassle.
Behold...Low Carb Zucchini Pizza Boats

Prep: 10 minutes
Serves: 2-4, depends on your zucchini size and appetite!
WW SmartPoints: 10 for entire zucchini boat, 5 each if cut into 4. I had 1/4 for lunch and it was perfect!
*Pro Tip-save points by subbing plain FF Greek yogurt (0 SmartPoints!) for cream cheese
Ingredients:
1 large or 2 regular zucchinis
1 small tomato
1 small onion
1 cup bell peppers
1/2 lb 99% fat free ground turkey
1/2 cup reduced fat cream cheese
1/2 cup shredded pizza cheese
8 pepperonis, cut in half
Salt and Pepper to taste
Garlic powder
Oregano
Red pepper flakes

Directions:
*Preheat oven to 425.
Grab yourself a popsicle since it's a heat wave and your kitchen is about to be crazy hot.
1. Cut zucchini in half, cut/scoop out inside to create hole for filling. Leave some zucchini meat in there so it will be sturdy and not just skin.
2. Microwave for 3 minutes to soften.
3. Saute the following in PAM spray or 1 tsp olive oil- 1 small diced onion, 1 small diced tomato, 1 cup sliced bell peppers (I had frozen on hand) and 1/2 lb ground turkey-- 99% Fat free is ZERO Weight Watchers SmartPoints!
4. Add 1/2 cup light cream cheese to cooked mixture.
5. S&P to taste
6. Fill zucchini boats with mixture, top with 1/2 cup shredded cheese and sliced pepperonis.
7. Bake at 425 F for 20 minutes.
8. Allow to cool, top with red pepper flake or grated parmesan to make it a real pizza party and enjoy!
