Flour Free Lent-Recipes and Musings

"IT'S DONUT DAY!"- How I start every Saturday morning.

I have learned to live without bread. I don't crave pasta. But donuts? OMG. Munchkins, Breakfast sandwiches. Chocolate cake. Cake pops from Starbucks. Gotta love sweet, floury items.

I wish Lent happened more often throughout the year, because I truly feel and look my best when I cut all flour from my diet. The only reason I can do it this long is because God is watching. And I was raised with that Catholic guilt.

What does giving up flour have to do with God? It helps me realize that comfort food is not real comfort. Faith is comfort. Prayer is comfort. Going for a run and listening to country music is better for me than chocolate cake.

So here's a peek at what we (yes, WE. My husband agreed to join) are eating.

This paleo pumpkin custard is OUT OF THIS WORLD. I used pumpkin pie spice and almond flour. I never usually follow recipes, and this was glorious. But I did use light whipped cream. Because...yum.

BLT, sans bread


Chia Pudding: 2 tbs Chia seeds, 1/2 cup almond milk,
pecans, and a tsp of homemade strawberry jam from a friend.
Let sit overnight in fridge. SO many variations.



Eggs and bacon.
Salsa and light sour cream.
As low carb as it gets.
Luckily they sell pepperoni and cheese cups at work. 
I like to have my snacks right where I can see them haha


Okay. And are you ready for this?
Chicken Picatta. Flour free.  I used coconut flour and corn starch to dredge. Coconut oil to pan fry. 
White wine. Cream and grated cheese. Chicken broth. Garlic. Lemon juice. Italian seasoning. Bake for 30 min at 350. Prepped for work with zucchini noodles.
