I saw this on one of those Facebook quick videos a while back. You know, the ones you save and share, but never actually make? Well I finally made it, and tweaked to my liking. My husband and I are OBSESSED with this recipe. I believe it's "Korean" chicken or "Firecracker" or something like that. It's tasty chicken.
#1 Set up- Make a breading station with tapioca flower, egg wash, and smooshed corn flakes. (I'm looking out for you gluten free peeps.) It makes me feel better that this is fried chicken when it doesn't use real bread crumbs muahahah. First flour, then egg wash, then flakes.
#2 Quick fry- Maybe a minute or two per side, until brown and crunchy looking. I used canola oil. You can use coconut oil if you're cooler than me.
#3 Bake- 15-20 minutes at 350
#4 Sizzle up the sauce- I'd say about a cup of brown sugar, tsp of crushed ginger, 2 tsp of crushed garlic, tsp of red pepper flake, 1 tbs of sesame oil, and 1/2 cup of soy sauce. I eyeballed it. You can add sriracha too.
#5 Coat the chicken with the sauce and let it sit and thicken and soak up all the goodness. Top with chopped green onions if you remembered to buy them.
#6 This is kind of a tedious and messy process. Keep it simple with your sides. I did quick white rice and some stir fry veggies. Let's be serious, white rice is 100x tastier than brown rice. Especially with chicken this saucy and yummy. Soon enough my garden will be producing and we can have fun with those veggies.
#7 ENJOY! Impress your friends. Or pack for lunch. Alex and I will be enjoying this all week.
