Cookout season is coming! Come prepared with a side or vegetarian option main dish. Nobody will know it's guilt free. I made this for the week to have as lunches with grilled chicken. Light and refreshing. Mix it up with any veggies you like. Peas, asparagus, and zucchini rock too!
Ingredients
Whole box Ronzoni Ancient Grains Whole Wheat pasta (lowest sugar, highest protein I found)
2 cukes2 lemons
1 red onions
Pint cherry tomatoes
12 oz President Fat Free Feta Cheese
1/2 cup Christie's light Greek dressing
Boil pasta
Chop veg
Squeeze in a fresh lemon
Rinse cooked pasta in cold water
Toss with dressing and feta
Voila!
